| BANOSH - Corn dish from Western Ukraine DIRECTIONS: Cook corn meal in sour cream. For that you need about half a pound of sour cream in a non-stick pan and keep slow mixing it until it's hot. Don't boil it! Add corn meal (about 1/2 or 1/3 of sour cream amount) but remember it will swell, increase in size, puff up and enlarge and you don't want it to be too solid. It should be very soft and "melt in a mouth" when ready. So, keep mixing till corn is ready, keep it very hot but avoid boiling. If it gets too hard, slowly add more sour cream. Add salt and butter, and let it sit covered for 5 min. Put in a serving bowl (the best way to serve: put each potion in a separate small bowls), cover half with the goat cheese (feta cheese) and half with cooked and cut portabella mushrooms. ENJOY! |
