Refried Beans

This healthier version of the classic omits lard and uses chicken stock instead for flavor.
Chicken stock can be also substituted for vegetarian version or omitted as well

INGREDIENTS:
2 pounds brown or black cooked beans
1/4 cup vegetable oil
1/4 large white onion chopped
one cube of chicken stock or alternative or omitted
salt to taste

DIRECTIONS:
In a large skillet heat the vegetable oil and saute onions, add chicken stock cube, salt and beans. Heat up and turn the heat down. Use a crusher to smooth out the mixture.
